Parting Shot: Seasoning with a Graceful Touch

Tezloff Silo tosses freshly fried sweet potato and taro chips with salt at Hawaiian Chip Co. “The vegetable varieties are fried separately then mixed,” says GM and Owner Jimmy Chan. Mixing is a tricky job requiring delicate technique to avoid breaking chips. Chan served homemade chips in small plastic bags to his friends before he formed the company in 2000. Today a team of 21 employees turn about 1 million pounds of root vegetables into chips each year. Chan says a unique thing about the factory is its store, where customers order still-warm chips and add seasoning themselves.
