At Lappert’s, a Kauai-based ice-cream chain with an outlet at the Hilton, Nicole Granciosa pours waffle batter into a form (at left). A minute later, she removes the fresh waffle, rolls it into a cone with a wooden tool and sets it to dry. Grancioso makes as many as 90 an hour.

Risel Joy, right, digs into a bin of banana ice cream to serve a customer. After 28 years at the Hilton, Lappert’s remains a favorite with locals and tourists, says manager Larina Aliksa.
