You might expect the president of Hawaiian Dredging Construction Co. — Hawaii’s largest general contracting company to be a no-frills tough guy. Here, Bill Wilson reveals his green thumb and sophisticated palate.

FOOD

When it comes to food, it’s all about variety. That’s why Wilson’s favorite restaurant is Hiroshi Eurasion Tapas in Restaurant Row. His favorite dish is the Duo of Contemporary Sushi, which consists of miso-glazed salmon and ginger-scallion ahi.

RECREATIONAL ACTIVITY

Golf. His handicap ranges between 13 and 15, depending on the month. “There are always a few good shots, as well as a few to keep you humble,” he says. (Wilson enjoys the sport so much that his favorite “book” is Golf Digest.)

WAYS TO RELAX

Wilson enjoys putting on his headphones and listening to soft rock while working outside in his yard. More recently, he finds comfort cruising in his new Acura RL, though he has yet to figure out the car's many buttons and knobs.
